I was looking to spend about £1200 on a new PC, got a little carried away.

You won't need more than 4GB of RAM for quite a while yet so 12GB is certainly overkill.

I like your build Meds, I am still wary of a lesser RAM as that is where my current PC keeps letting me down, most of the time, so think I will go with

8GB SAMSUNG DDR3 DUAL-DDR3 1333MHz (2 X 4GB)

Meet you half way so to speak

Can you give me an idea of how future proof this build will be? And is the motherboard capable of foreseeable upgrades?

I was tempted to stick 8GB RAM in there but I was already £5.00 over budget

This PC has plenty power which will breeze through all of the latest games and future releases such as Crysis 2 & Battlefield 3. In terms of upgrades, you'll be able to stick another GTX580 in there and double the RAM to 16GB if/when needed - what more could you want for gaming

wouldnt it be cheaper to use a cheaper CPU Cooler...A.L.C's are generally used if your going to overclock at some point.
