Generally speaking, you take the highest GPU you can in a laptop for gaming.
Its not something thats upgraded as you go, you're stuck with it.

What games/reason is it you want to take 32GB RAM?

My reasoning is that it would help with video editing and processing, im gonna work with 4k videos and the recommended RAM size is 32GB where I've looked, is it a bit overkill going for 32 ? Should 16 suffice for that ?

Really seems that way and i agree with the changes made, that's probably the build that i will order, ill just wait a bit to see if there's any other recommendations or suggestion as time isn't really a issue and i can wait for a few days.

If your doing Video editing, it is still possible to do it on 16GB of ram however if your using loads of effects, transitions etc 32GB of ram will certainly help.

I am putting 32GB into my system and mainly will be gaming which 16GB would be enough however I do Hyper-V some times so 16GB extra helps me on that.
