Well, on the previous CC version i could set the max GPU temp to 75 for example and when gaming COD, the GPU temp was staying at max 75. This does not work anymore and some options are not even available, the option is not even available and GPU temps are going 90+.

I had the same issue with Windows 11 and i needed to roll back to Win 10. Did you manage to get PCS to send you the new CC ? they told me there is no new CC for win11... and it should work with the one i have.
