For that monitor the 3070 would be a better fit, you're looking at spending upwards of £750 on a 1440p Superwide or 4k144hz display to make the most of a 3080.
For the PSU get the 850W RMx, it's only £6 more and that gets you a fully modular PSU that will run near silent under lower loads, and will last you the full lifetime of your build.
For the wifi I would recommend upgrading to the AX200 card, it gives you access to the less congested 5GHz channel and also has bluetooth support for only £11 extra.
For your storage I would probably rejig your m.2 drives to have a 500GB 980 pro for your OS and programs, and then a 1tb PCS m.2 for your games and any projects that you're working on. I would optionally replace the 870 SSD with a 256GB cache drive.

It may depend how seriously into their video editing our OP is. If they’re doing lots of heavy rendering, the 3080 might actually be justified.

@daniel02 - can you shed a bit more light on this, please?

You’re pretty much there if you go with MrWilsons recommendations, however i’d scrap the sata ssd all together and get a 2TB Firecuda if it comes in within budget.

The 3080 vs 3070 at UWQHD comes down to the individual. Most would argue the 3070 is enough, but i like to run everything ultra and see it maintain well above the 144fps. But... a 3070 build will be with you much sooner and much cheaper.

If you’re really going all out with gaming and different types of editing, I’d probably head in this direction (your budget would actually extend to the 5950X CPU with the Crosshair VIII motherboard, that system is bordering on Skynet levels of power)

You can just use the link on his build when you come to placing an order, if youve already put the order in then just open two browsing windows side by side, one with his spec list, and go through and amend the differences
